Cheese Bread (Salvadoran
dessert)
Called
Salvadoran Quesadilla in its country of
origin, this delectable dessert is not to be
confused with the Mexican quesadilla, which is made
from a tortilla with melted cheese, among other
ingredients. This dessert is a favorite of the
Salvadorans, especially served with hot coffee.
There are many variations to the Salvadoran
quesadilla; for example, you can create your own
recipe, substituting rice flour with soy, corn or
sorghum flour. The milk can be substituted with
buttermilk.

Ingredients
- ½
cup rice flour and ½ cup wheat flour, or 1
cup wheat flour
- 1 cup
sugar
- 1 cup
grated Parmesan cheese (to replace dry
Salvadoran-style cheese)
- 3
eggs
- 4
ounces melted butter or margarine
- 1/3
cup lukewarm milk
- 1
teaspoon of baking powder
- sesame
seeds
Preparation
In a
mixing bowl, mix the dry ingredients; add the
melted butter or margarine a little at a time and
then the eggs one by one, alternating with the milk
until it forms a soft paste.
Put the
mixture in a greased baking dish and sprinkle the
sesame seeds over the mixture. Bake at 350 F for 20
to 30 minutes or until golden.
The
quesadilla is served hot, alone or with ice cream
and coffee liquor. It is delicious! (At least for
this Salvadoran.)
